Do you ever feel like the only thing holding you back from achieving all your life goals is a spoonful of cookie dough? That the one thing in the world that could make you happier is a towering spoon of chocolate-studded doughy goodness? That the puzzle pieces of your life have all come together and the only piece missing- a corner piece, no less- is the ability to have a ready-made scoop of cookie dough whenever the craving strikes?

That’s why I made this single-serving cookie dough- for you, when you need it most. I wasn’t thinking of myself as I stirred up bowl after bowl, night after night, snacking on that creamy, doughy, life-force substance we know and love as cookies dough. Oh no. I was just thinking about you, my dear readers. Nothing selfish is going on around here at all.

I know you need more cookie dough in your life. I can feel it deep in my bones. Oh, and whenever I share a picture of my cookie dough on my Instagram stories, I get a bazillion messages from people who want the recipe. Ask and you shall receive, my friends. Single-Serving Cookie Dough

It’s probably apparent by now that I love dessert. I almost always want something sweet after dinner; sometimes I just want a piece of chocolate or fruit, or I will snack on any of the leftovers from various baking projects that fill my kitchen. But when I find myself with no dessert leftovers, and minimal time to bake an entire batch of brownies, cookies, or whatever else I’m craving, severe disappointment sets in. And let me tell you, disappointment is the worst.

It’s those time’s that I’m reaching for quick, easy, single-serving desserts. This cake is great for times like that, but a lady can only eat so much cake before getting sick of it. Cookie dough, on the other hand, is a nighttime treat I will never, ever tire of. Seriously- hand me a spoonful of cookie dough and I’m good to go. 

This single-serving cookie dough was never meant to be baked, so don’t even think about it. If you’re a cookie dough hater, we are no longer on speaking terms this recipe isn’t for you. I did add a pinch of baking powder and microwave the dough for 10 seconds once, for a warm, melty, barely-baked-cookie experience, but let’s not push this thing too far. This dough was made to be eaten raw! 

To make this easy anytime snack, you’ll need:

coconut oil (or softened butter)

maple syrup 

vanilla

oat flour (you can easily make your own oat flour, btw)

a teeeeeny pinch of salt

So, if you’re following along here, I’m saying there are only 6 ingredients standing between you and a spoonful of cookie dough, and they’re ingredients you likely already have in your pantry. Also, don’t tell anyone, but those ingredients mean this cookie dough is vegan/gluten free AND I have it on good authority from my girl Austin on Instagram that almond flour works just as well if you need a grain-free option. Bonus: you can swap out the coconut oil for PEANUT BUTTER and turn this cookie dough into peanut butter cookie dough.

A single-serving recipe for when you just need a spoonful of cookie dough!

Ingredients
  

  • 1 Tablespoon coconut oil* room temperature
  • 1 Tablespoon maple syrup
  • 1/8 teaspoon vanilla extract or just a tiny splash
  • a tiny pinch of salt
  • 3 Tablespoons oat flour**
  • 1 Tablespoon roughly chopped chocolate or chocolate chips

Instructions
 

  • 1. Put coconut oil, maple syrup, vanilla, and salt in a small bowl, and stir well to combine. Add flour and chocolate, and stir. Enjoy!

Notes

*Softened butter can be used instead of coconut oil
**Make your own oat flour by grinding oats in a food processor, coffee grinder, or high-powered blender
If you want warm gooey cookie dough, add a pinch of baking powder, and microwave the dough for 10 seconds. This will NOT turn into a cookie when microwaved, but does get nice and gooey like a very, very underbaked cookie.

  1. My life is changed! My oven is down for a couple of days because the ignitor needs replaced, and I have been craving something cookie-like to go with my tea. I made it the PB way with about a 1/4 tsp of ghee added. It’s amazing. Thanks!!!
