Happy Monday! Yesterday we talked about back-to-school snacks, and now I have sandwiches on the brain. Can you tell I’m getting ready to go back to school?
I’ve been watching my 18-month old niece all weekend so I’m going to keep this short and sweet. Most of my time has been filled with drawing, dancing, snacks, jumping, finding rocks, tickles, and translating baby words that, for some reason, all sound like “cheese” to me. There’s been little time to think about this little blog of mine, so I don’t have much to tell you about this sandwich.
I made this sandwich last week with leftover homemade bread, which made it extra special. Rest assured, though, because whatever bread you love will taste just as great. The combination of creamy goat cheese and avocado with crunchy cucumbers and sprouts is just perfect. It packs well for picnics or school/work lunches, too.
To make this sandwich, here’s what you need to do:
- Toast some bread. If you don’t like toasty bread, don’t toast it. Your choice.
- Slather herbed goat cheese onto the bread.
- Layer slices of avocado, cucumber, and sprouts onto once slice of bread.
- Top with the second slice of bread; eat.
Really, it’s that simple. I used goat cheese leftover from this pie , but you can also just buy herbed goat cheese at the store. I sometimes see cracked pepper goat cheese at the store, too, which would be great here as well. If you’re making this for kids who are suspicious of goat cheese, you could definitely swap in an herbed or veggie cream cheese instead.
I hope you love this sandwich as much as I do. After eating it three days in a row last week, I can guarantee you it will be making an appearance on my desk at work sometime soon. Goat Cheese & Avocado Sandwich
Ingredients
- sandwich bread
- herbed goat cheese
- avocado slices
- cucumber slices
- sprouts I used radish sprouts for a spicy bite, but use whatever you like, or even spinach or romaine
- salt + pepper
Instructions
- 1. Toast bread, if desired. Spread each slice of bread with goat cheese, then add several slices of avocado and cucumber, and a handful of sprouts to one slice of bread. Add a pinch of salt and pepper on top of the veggies. Top with second slice of bread, and eat. If packing this in a lunchbox, I recommend wrapping it rightly to prevent the avocado from browning, or even squeezing a little lemon juice onto the avocado for the same reason.
