Picture this: It’s the Tuesday after a long weekend and you have an extra avocado sitting in your fruit bowl, threatening to spoil if you even look at it the wrong way.
You know how avocados are- one day they’re hard as a rock, the next day you cut them open to find they’re so soft the only thing you can do is mash them up immediately have a personal guac-fest.
Not that I have any issue with solo guacamole parties, but I think you’ll find these brownies are an even better use for that super ripe avocado. I’m talking dense, fudgy, intensely chocolatey brownies with a thick peanut butter swirl on top. Made from avocados. Do I really need to explain more?
You’ve seen these brownies before, albeit without the peanut butter and cut into cute little triangles. Well, ever since the day I posted those fudgy beauties, I’ve been dying to make a peanut butter version. I tried them out with peanut butter in the batter, but wasn’t crazy about the texture. Instead, I kept the original recipe, but used oat flour instead of whole wheat, and swirled plenty of golden, heavenly peanut butter on top.
These brownies are extra special, because I made them for my friend Jenna. Jenna and I met through Instagram, and are totally kindred spirits. Jenna is a health coach, but don’t let that dissuade you. I know Instagram is full of health coaches whose mission is to sell a diet program and getting you to fear food and hate your body; they promote self-love in the form of ‘get-thin-and-then-you’ll-love-yourself-more’. I was just as weary as you, since most health coaches are just thinness coaches, and I avoid them like the plague. Jenna, on the other hand, is the real deal. She’s a certified holistic health practitioner, and is truly dedicated to helping people live healthier lives- in whatever form that may be. Plus, she is such a kind, sincere person.
