The overnight temperatures have finally started dropping here in Massachusetts, which means we’ve finally entered warm + cozy season.
You know, that time of year when your body starts asking for more hearty, nourishing meals to fill you up and keep you warm during the colder months?
If you’re feeling the same, here are 16 meals to try out this fall. They’re all meatless (many are easily dairy-free/vegan, too!) but hearty enough to please omnivores. Everything here is loaded with fall produce, easy to make, endlessly customizable to suit your family’s preferences, and downright comforting.

Literally no one would guess this ultra creamy soup is vegan! Cashews make it extra creamy, and it’s the best vehicle for dunking lots of crusty bread!
30 Minute Thai Green Curry
Saucy, a little spicy, and such an easy meal to throw together on a weeknight. Serve with rice and a squeeze of lime juice!
Black Bean + Kale Salsa Verde Enchiladas
A jar of storebought salsa verde blended with cashews makes these enchiladas bright, flavorful, and green! Use a plant-based cheese on top for an easy dairy-free/vegan meal!
Cheesy Spinach + Artichoke Baked Pasta
Literally spinach and artichoke dip in pasta form, but without the mayo (that I have no problem with, but don’t really love hot in a dip?). Canned or frozen artichoke hearts are perfect here!
Spicy Cauliflower Curry with Chickpeas and Potatoes
I took two of my favorite orders at our local Indian restaurant- Aloo Gobi and Chana Masala- and combined them into one single dish. Full of chickpeas, tomatoes and spices like chana masala, and tender chunks of cauliflower and potato like aloo gobi.

This feels like a hearty, filling, non-vegan casserole, and is one of my favorites to make! Everyone loves this cheesy broccoli bake!

Chipotle Cauliflower + Chickpea Enchiladas
Classic red enchiladas, but with a veggie twist! Filled with roasted cauliflower and chickpeas, and a little smoky from chipotle. I love these leftovers reheated for lunch the next day!
