lets talk peanut butter

Since we’re making peanut butter cookie dough bites, I feel like I need to get something off my chest.

I’m guilty of being a peanut butter snob.

Like, a really big one. It’s okay, I’m embracing all the oddities and criticism that may come with such a title.

I want my peanut butter to be most, if not all, of the below:

Roasted, salted, thick + creamy, unsweetened, ideally organic.

Brands like Teddie and Santa Cruz Organics are great store-bought options, but I usually make my own with bulk organic peanuts that I roast until deeply golden, then blend until smooth with a few generous pinches of salt.

Peanut butter products that are made with hydrogenated oils, corn syrup, and weird stabilizers (cough, Skippy and Jif, cough) are not, in my opinion, even peanut butter. They’re oddly waxy and pasty, and do not, in my experience, make highly flavorful peanut butter recipes.

All this to say: grab a jar of peanut butter that’s made with just peanuts and salt, and you’ll be good!

Making these peanut butter cookie dough bites couldn’t be simpler.

First, we’ll pop some oats into the blender/food processor to turn them into flour. If you already have oat flour in your pantry, you can just skip straight to the next step.

Next, all of the ingredients go into a bowl (peanut butter! maple syrup! oat flour! salt! chocolate chips!) and get stirred together.

The dough gets scooped into little balls (I love using this 1.5 Tablespoon cookie scoop to make my life easier), rolled between the palms of your hands, and you’re done.

These can be eaten immediately for a soft, freshly-mixed cookie dough texture, or chilled for up to a week and eaten cold for that quintessential straight-from-the-package cookie dough experience.

Both ways are equally lovely.

And, don’t forget to save a little bite without a chocolate chip in it to pay your dog assistant. She’s not working for free, that’s for sure.

Peanut Butter Cookie Dough Bites [no-bake + vegan]

Ingredients
  

  • 1 cup all-natural peanut butter creamy, unsweetened
  • 1/4 cup maple syrup
  • 1/2 cup oat flour see notes to make your own
  • 1/4 teaspoon sea salt
  • 1/4 cup chocolate chips

Instructions
 

  • Place all ingredients into a small mixing bowl and stir well to combine
  • Use a small cookie scoop or a very heaping tablespoon to equally portion out the dough into balls. Roll each ball between the palms of your hands for a more smooth, uniform appearance.
  • Place balls in an airtight container and store in the fridge for up to 1 week.

Notes

To make your own oat flour: pulse 3/4 cup of rolled oats in a blender of food processor until fine and powdery. Measure out 1/2 cup to use for this recipe.
