Why hello there, salted chocolate snack of my dreams.

The sunflower seed butter obsession continues with one of my all-time favorite ways to eat it: smeared onto dates!

But today we’re taking it even further and stuffing dates with homemade maple cinnamon sunflower seed butter, dunking them in melted dark chocolate, and sprinkling them with flaky sea salt.

It’s literally a 5-ingredient, no-recipe situation that ends up feeling and tasting like a special, decadent treat.

I’ve been known to use any combination of nut or seed butters, different dark chocolate percentages, and even figs instead of dates, but I keep coming back to this version again and again.

Plus, I kind of think they look like a Reese’s Peanut Butter Egg, which means they’re also the perfect little homemade treat for easter baskets.

They’re made in just a few minutes, keep in the fridge for weeks (though I find it highly unlikely that you’d actually go that long without eating them all!), and make every single person I’ve ever offered one to excited to receive such a fun little bite-sized treat.

And, by all means, feel free to stuff these babies with peanut butter, or salted maple pecan butter, or super thick almond butter, or whatever nut/seed butter makes your soul happy.

fun fact about dates:

Research has shown that consuming 4-6 dates in the last few weeks of pregnancy can reduce the duration of labor and reduce the need for induction. If you know someone who happens to be pregnant, these salty chocolate sunflower seed butter stuffed dates make for a MUCH more exciting way to consume those daily dates than just eating them plain. I still have about six weeks to go until my due date, but I’m planning to stock the fridge with these for snacking pre and post delivery!

Dark Chocolate Sunflower Seed Butter Stuffed Dates

A quick, easy, healthy homemade salty-sweet treat made with medjool dates, chocolate, and sunflower seed butter!
Time 15 minutes
Course Dessert
Servings 12 dates

Ingredients
  

  • 12 large Medjool dates
  • 1/2 cup maple cinnamon sunflower seed butter or your favorite nut/seed butter
  • 1/2 cup roughly chopped dark chocolate
  • 1 teaspoon virgin coconut oil
  • Flaky sea salt to top

Instructions
 

  • Cut each date open and remove the pits. Set the dates on a large plate (line the plate with parchment paper for easier clean-up!).
  • Use a small spoon to stuff as much sunflower seed butter inside the dates as possible, to fill each one up. You may not need the entire 1/2 cup of seed butter, depending on the size of your dates.
  • Place the chocolate and oil into a microwave safe dish and heat in 30 second increments, stirring inbetween, until fully melted.
  • Dip each stuffed date into the chocolate, turning to fully coat. Then, us a fork to lift each date out of the chocolate and transfer to your plate. Top each with a pinch of flaky sea salt.
  • Place the plate into the fridge or freezer for 3-5 minutes to let the chocolate firm up, then eat immediately or transfer to a container and store in the fridge for up to 2 weeks before serving.

Notes

I used this recipe for homemade maple cinnamon sunflower seed butter, but any nut or seed butter you love can be used in place of it in this recipe!
