Things I’m Loving Lately

Hey hey! Happy Sunday! 

How’s life? Are you loving this spring weather or what? I’m jumping for joy on the inside (and, usually on the outside, too) whenever I come across a patch of crocuses or a blossoming tree. I am SO ready for Spring. 

Yesterday we celebrated my grandparents’ 72nd wedding anniversary down on the Cape, and today my sister and I are making brunch for the whole fam at our Dad’s house. There will be lots of cinnamon rolls, fritattas, roasted potatoes, and probably a few dozen deviled eggs, because hey, it’s Easter. What other occasion do we have to eat those suckers?

If you’re reading this early in the morning and still have no idea what to make for breakfast today, check out this carrot cake baked oatmeal or any of these muffin recipes– they’re all hearty, filling, and totally crowd pleasers. Plus, depending on how well stocked you keep your pantry, you’re likely to have all the ingredients on hand already.

Healthy Lemon Poppyseed Muffins. I NEED these in my life. Just look at that glaze!

THESE  measuring cups. The best I’ve ever owned, hands down (and they’re on crazy super sale right now!)

Puerto Rican Breakfast Lasagna with PLANTAINS instead of pasta?! OMG YUM.

30-Minute Vegetarian Meatballs. Say no more. 

Chickpea Shawarma Flatbread. SO GOOD. 

This tiny, handmade full moon ring. I’m wearing it right now + am IN LOVE.

OBSESSED with this chickpea pasta lately. So tasty, so protein + fiber-rich. 

The Aeropress Coffee Maker. It’s the only way I make coffee! SO convenient for a single cup.
