The top 25 reader favorite recipes of 2018 on Baked Greens. These recipes are the ones viewed the most in 2018, with everything from savory main dishes to chocolate filled desserts to healthy breakfast options and everything in-between!
I love looking back over the year and seeing which recipes resonated most with my readers. I’m always surprised by some of the recipes that make the list- and some that don’t- and love seeing which recipes have become family favorites in your house!
So, without further ado, here are the top 25 recipes of 2018, in reverse order:
25. One-Pot Chickpea Tikka Masala
Saucy, spicy, totally vegan, and super comforting on a cold night. We’ve probably made tikka masala a dozen times this year!
24. Cashew Cookie Dough Freezer Fudge
I kind of forgot about this recipe until right now, but OMG it’s literally like eating a cube of cookie dough, but made with a handful of wholesome ingredients. Making another batch ASAP.
23. 7-Minute Creamy Roasted Red Pepper Sauce
Made in a blender with pantry ingredients like roasted red peppers, tomato paste, and cashews (for creaminess- trust me, it’s so good!), this sauce has been our go-to for pasta, pizza, and topping grain bowls all year long!
22. Flourless Almond Butter Waffles with Dark Chocolate Sauce
Gluten-free. Grain-free. Totally crispy, fluffy waffles, smothered in an easy homemade chocolate sauce. If chocolate for breakfast is wrong, clearly NONE of us wants to be right.
21. Feta Pesto Pasta Salad with Arugula and Sun-Dried Tomatoes
A total pasta salad staple: store-bought pesto, pasta, arugula, sun-dried tomatoes, and feta all get tossed together for an easy, flavorful side dish. I even ate leftovers for breakfast this summer because I just couldn’t get enough!
20. Grillable BBQ Black Bean Veggie Burgers
Smoky, meaty (but, meatless), texture-loaded veggie burgers that don’t fall apart on the grill…I’m so glad this is one of the reader faves this year because it forever has a place in my heart.
19. 4-Ingredient Chocolate Sauce
Clearly you’re here for the chocolate. Me too, friends, ME TOO. This chocolate sauce is vegan/paleo friendly, literally made in under 5 minutes, and perfect for anything in your life that needs a drizzle of chocolate (read: everything).
18. No-Bake Chocolate Cream Pie
I think this is the best chocolate cream pie I’ve ever made (seriously!)- it’s vegan/paleo/GF friendly, is made entirely in a food processor or blender, and makes the most thick, rich, creamy slices of pie this side of the Mississippi. Or, something like that.
17. Caramel Apple Overnight Oats.
Alternatively titled: let’s swirl caramel into our breakfast. I love love love keeping this around for easy, healthy (but indulgent-tasting) breakfast options during busy weeks!
16. Blueberry Oatmeal Banana Bread
I kid you not, I probably made this banana bread 20 times this year. I’m kind of sick of it by now, but I’m so glad to know you aren’t! Pro tip: this recipe can be baked into 12 muffins in about 20 minutes!
15. 4- Ingredient Salted Chocolate Pecan Fudge
I’ve gotten so many Instagram messages from people who made this fudge over the holidays- it’s so ridiculously simple, made with healthier ingredients, and the most luscious, melt-in-your-mouth fudge, ever. If you haven’t tried it yet, you really need to!
14. Grain-Free Olive Oil Chocolate Chunk Cookies
When I first made these cookies I had no idea that they would become a SENSATION. Seriously, you guys were all about them, and I couldn’t be happier. They’re made with almond flour, have a subtly complex flavor from the olive oil, and are every bit as perfectly gooey and slightly crispy as traditional CCCs.
13. Flourless Peanut Butter & Jelly Muffins
This one surprised me: I had totally forgotten about these muffins! We were on a serious muffin kick for a while there (who am I kidding, I’m always on a muffin kick), and these flourless ones are such a fun way to get your PB&J fix!
12. CBD Matcha Latte
I am literally drinking a CBD Matcha Latte as I type this…I’m so glad you’ve all enjoyed learning about CBD and tried lots of Luce Farm products this year- aren’t they just the best?
11. 5-Ingredient Salted Peanut Butter No-Bake Cookies
Vegan. Gluten-Free. Quick. Easy. Tastes like cookie dough. YES PLEASE. So glad you guys are loving these salty-sweet bites of peanut butter joy, because they are HEAVENLY.
10. Dark Chocolate CBD Almond Butter Truffles
Woah, two CBD recipes made it to the top 25? You guys are the best. As are these truffles… make them for your New Year’s Eve parties? The flavors of chocolate and CBD were just made for each other!
9. Gluten-Free Double Chocolate Pumpkin Bread
This GF loaf is made with oat flour so it’s a little extra dense, moist, and crumbly- but in the best way possible! So many of you have made it and shared pics on Instagram, and I’ve loved seeing every single one of them!
8. Blueberry Banana Breakfast Cookies
Breakfast cookies are just the best, aren’t they? These ones are like a super oaty muffin top, and while I love blueberries in them, I’ve seen you guys make them with dried cranberries, frozen raspberries, and even chocolate chips!
7. Whole Wheat Double Chocolate Zucchini Bread
There are a million and one zucchini bread recipes online, and I’m so flattered that so many of you have taken the time to make this one! It’s made with whole wheat flour, olive oil, and a mountain of chocolate chips, so that you’re pretty much eating (healthier) chocolate cake for breakfast. I mean…what’s not to love?
6. Chocolate Peanut Butter Avocado Pudding
As if you needed another reason to buy copious amounts of avocados at the store every week: this pudding is thick, creamy, so silky-smooth, and was my breakfast and/or dessert of choice for like two weeks straight this summer.
5. Small Batch Oatmeal Chocolate Chip Cookies
This was one of the first recipes I shared in January, and it’s been going strong ever since. Turns out, we all need a good small-batch cookie recipe in our lives…who knew? If you find yourself with a leftover cookie the next morning, I HIGHLY recommend breaking it in half and sandwiching with some peanut butter. It’s a game changer.
4. Coconut Oil Chocolate Chunk Blondies
Easy, 1-bowl, vegan, whole wheat blondies…I guess I shouldn’t be surprised that these are in the top four! If you’re into nuts, these are great with a few handfuls of walnuts or salted almonds stirred into the batter!
3. Peanut Butter Cup Protein Bars
Chocolate + peanut butter have my heart forever and ever, and these protein bars don’t disappoint! Oddly enough, I don’t think I’ve bought or used protein powder once since I made these (I went through a protein powder phase, but I’m just not into it much these days), but I might just have to grab a tub of it because these bars are so great for a quick + easy protein-filled snack (that tastes like a Reese’s cup!).
2. Crusty No-Knead Oatmeal Bread
I didn’t invent the No-Knead Bread sensation (thanks Jim Lahey!) but this loaf is seriously special. I tweaked the amount of yeast and ratio of whole grain flours and came up with a loaf that’s easy enough for ANYONE to make. If you haven’t made a loaf in a while, mix up a batch today…you won’t regret it!
1. Thick + Creamy Coconut Milk Coffee Creamer
I had NO IDEA this was going to be the number one, most popular recipe on Baked Greens for the entire year. Number one! My quest to make a dairy-free coffee creamer that didn’t separate, wasn’t weirdly chunky, had no freaky ingredients or odd aftertaste, and actually made coffee creamy- not watery- led me to this gem of a recipe, and apparently you’re just as into it as I am!
Well, that’s it! Thanks so much for being here with me in 2018, for making my recipes, sharing them with me on Instagram, sending me emails telling me how much you loved them, and just being here! You are so appreciated!
And, if you have a Baked Greens favorite from this year that didn’t make the cut, be sure to share it below!
XO,
Chelsea
