Lets make a creamy, frothy, dairy-free latte with just THREE basic pantry ingredients:
COFFEE, VANILLA, and ALMOND BUTTER.
Yes, I said almond butter. In coffee.
Don’t fight it.
I see you over there imagining the horror of stirring a spoonful of almond butter into your coffee and slurping up a separated, clumpy cup of coffee with odd chunks in it and I’m here to reassure you: WE ARE NOT DOING THAT.
Goodness no.
Instead, we’re dumping everything directly into a blender and using the magic of electricity to turn it into the dreamiest latte, ever.
It doesn’t even make sense how such a thing could get so perfectly creamy and frothy, but I’m not here to question the inner workings of this latte. I’m just here to express gratitude that I live in a world where such a thing exists.
And to tell you to make yourself one, like right now.
I mean, if you want to.
No pressure.
But do it.
And, if you’re feeling like maybe straight up almond butter and vanilla in your coffee isn’t quite your cup of tea (er, coffee), a drizzle of something sweet like maple syrup or honey is also very much welcome here to help balance all that salty nuttiness going on.
Whatever you do, you need this ridiculously simple, ultra satisfying coffee option in your life, asap. Blend up a cup first thing in the morning, make one as a fun afternoon drink, or even pour it over ice if it isn’t absolutely freezing where you live right now.

Vanilla Almond Latte
Time: 2 minutes
Yields: 1 latte
Ingredients:
- 8oz hot coffee
- 1 Tablespoon almond butter (I like to use roasted salted but any almond butter you love will work here!)
- 1/4 teaspoon vanilla
- optional: a drizzle of maple syrup or honey, to sweeten
Instructions:
- Place all ingredients into a blender and blend for 10-15 seconds, until creamy. Pour into a mug and enjoy immediately.
